Twinkle’s Kitchen | Apricot-Cardamom Sorbet

Summertime brings a wealth of fresh fruit choices to the table. Apricots, one of my favorite summer fruits, are the perfect ingredient for a refreshing frozen treat.

This sweet dish makes a delightful marriage of fresh apricots and freshly ground cardamom seeds. It’s one dessert that will make you ask for seconds, and even thirds.

Apricot & Cardamom Sorbet

  • 2 cups coconut milk
  • 1 cup almond milk
  • ½ cup honey
  • 3 cups diced fresh apricots
  • 7 cardamom pods
  • ¼ tsp. sea salt


Place two cups of apricots into a blender and pulse.

Crush cardamom pods and remove seeds, placing through a spice mill or muddle, until seeds are a fine powder, but with a few small pieces remaining.

Place all ingredients – except the remaining apricots – in a large bowl and mix well.

Place this mixture in your ice cream maker and churn according to manufacturer’s directions.

At the end of churning, add in the remaining apricot chunks.

Refrigerate for at least 1 hour before serving.
