Fried Green Tomatoes

As the summer tomatoes begin to grow, impatience can grab you. All winter we’ve had to put up with hothouse replacements instead of the homegrown Heirlooms, Big Boys and Beefsteaks hanging from the vine.

Grilled Veggies

Instead of waiting, pick a few green gems and serve a Southern favorite – Fried Green Tomatoes.

Fried Green Tomatoes

Makes about 12-14 slices

Ingredients:

  • 4-5 large green tomatoes
  • 2 cups buttermilk
  • 1-cup medium grind cornmeal
  • ½ buckwheat flour
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 bottle Crystal hot sauce (or other regional hot sauce)
  • Vegetable oil

How-To:

In a large iron skillet, begin to heat your oil, about ¼ to ½ inch deep.

Slice your tomatoes in thick slices, about half an inch.

Pour the buttermilk into a medium bowl and whisk in one tablespoon of Crystal sauce. Or less to your liking (although I wouldn’t recommend less.)

In another bowl about the same size, whisk the cornmeal, salt, pepper and buckwheat flour together.

Once your oil is about 350-375 F, begin breading your tomatoes.

Place two or three into the buttermilk pressing gently on them to get the milk into the cracks.

Using a fork, lift each slice and place in the cornmeal mix. Gently shake the bowl in a flat, circular movement to cover the tomato with meal. If the top is still not covered, flip with the fork.

Life the slice and place it in the hot oil. Three or four slices should fit in together at once.

Cook on each side about 2-3 minutes or until golden brown.

Take out of oil, add more tomatoes and let rest cake cooling rack over a plate to drain extra grease.

Serve with Comeback Sauce and extra hot sauce.

Comeback Sauce

There are many version of this sauce, but most contain similar ingredients.

Makes 1 cup

  • ¾ cup mayonnaise
  • 2 tbs. ketchup
  • 2 tbs. Crystal sauce (or other hot sauce)
  • 1 tbs. Worcestershire sauce
  • ½ tsp. salt
  • 1 tsp. cracked black pepper
  • 1 tsp. lemon juice

How-To:

Mix all ingredients in a bowl and refrigerate until served.
