I am just aching for summer to be here, so salsa has been on my mind, like a lot. And since strawberries are abundant this time of year, a fresh fruit salsa drizzled over some killer tacos have been scheduled into the weekly meal plan, natch.
I could eat tacos every single day. I don’t really exaggerate when I say this, because to me, tacos are a perfect food. I am probably eating some right now while I am writing this.
Seriously, though, tacos are one of the most customizable foods. Cheese or no cheese, traditional (cilantro, lime and onions), a little of this a little of that and all folded into a handheld food vehicle – the corn or flour tortilla.
Top this off with a fresh, flavorful salsa and it is practically a full-proof meal.
The key ingredient for me in any good taco is an amazing salsa. I love visiting local authentic Mexican restaurants that offer their own freshly-made salsas and pico de gallo. It’s key to the whole experience.
So at home I want to at least replicate, if not up the ante on my own take on tacos. I love coming up with new ideas for salsas. With just a little work you can create colorful, tangy, hot and even sweet concoctions that are healthy as well as delicious.
Spicy Strawberry-Lime Salsa
- 4 medium tomatoes, diced
- 1 cup fresh strawberries, diced
- 1 bunch of fresh cilantro, chopped
- 1/2 red onion, diced
- 2 fresh jalapenos, diced
- 2 tbs. sea salt
- 2 tbs. black pepper
- 1 tbs. cumin
- 1 tbs. dried ancho chile powder
- 2 tbs. red wine vinegar
- 1/2 cup fresh lime juice
- 1 tbs. olive oil
Mix all ingredients in a large bowl, cover and refrigerate for 1 hour before serving. Store in an airtight container for up to five days.
