4 Tbsp butter divided
2-3 Tbsp Extra Virgin Olive Oil (EVO)
8 boneless skinless chicken breast strips
1 large shallot finely diced
¼ cup chopped flat leaf parsley
1 Small (3.5oz) jar of capers
6 Large mushrooms sliced
¾ cup chicken stock or broth
1 cup of white wine (I like an off-dry Riesling)
1 tsp lemon zest
2 Tbsp lemon juice
½ cup all purpose flour
1 egg whisked
Salt & Pepper to taste
1-2 Tbsp sugar as desired
Gold Medal Wondra flour Sauce thickener
- Preheat oven to 300F.
- Place breast strips (2 or 3 at a time) between parchment paper and gently pound to 1/4” thickness.
- Dredge the flattened breast strips in the egg, then the flour. Heat a large skillet over medium high heat, add 2 Tbsp of butter and the EVO until the butter just starts to brown. Fry the breast strips about 3-5 minutes per side until light brown, season with salt and pepper after turning. Remove to an oven safe serving dish and keep warm in a pre-heated 300F over.
- Add the remaining 2 Tbsp of butter, the shallots & mushrooms to the pan and stir for 1-2 minutes. Deglaze the pan with the white wine, then add the chicken stock, parsley, capers & caper juice. Reduce by about ½. Add the 2 Tbsp of fresh lemon juice, stir and taste. Adjust the acidity with sugar, then add about 1 Tbsp of Wondra while stirring the sauce. Reduce heat to low.
Either add the sauce to the serving platter or place the chicken on individual plates and add the sauce.
Serve with mashed potatoes and vegetable of choice.
Roasted Broccolini and Sweet Red Pepper Strips
Two bunches of fresh Broccolini
4-6 Cloves of garlic peeled and flattened
1 Large red bell pepper seeded and cut in to thin strips
Extra Virgin Olive Oil (EVO) in a oil spay device.
Salt & Pepper to taste
- Spread the Broccolini and pepper strips on a baking pan and spray with EVO. (If no spray device available; place the veg in a zip lock bag with 1-2 Tbsp of EVO and shake until coated.) Add salt and pepper to taste. Place on the top rack of an oven pre-heated to 350F. Roast for 7-8 minutes stirring twice.
To enhance flavor as desired, remove from oven and add melted butter and/or a squeeze of fresh lemon juice. Plate and serve.
